I am thinking way ahead to when I get my 1st turkey. I am wonder if anyone has any jerky recipes, and if so, how do you like turkey jerky? Bob

Tis just fine!
Ground Jerky
T = tablespoon TSp = teaspoon
5# ground meat 5 T. sesame salt 3 Tsp. sugar 4 ½ tsp. onion salt 2 ½ tsp. garlic powder 3 tsp. pepper (may want to use less) 3 tsp. cayenne pepper (may want to use less) 1 ½ tsp. paprika 5 tablespoons liquid smoke
Mix all ingredients. Place a spoonful between sheets of plastic wrap and roll flat with rolling pin to 1/8 inch thickness. Cut with knife or scissors into strips while still in plastic. I actually take one sheet off and use a filet knife. Peel wrap from one sode of strips and palce on a baking sheet sprayed with Pam. Pull top side plastic wrap off. Dry at 150 to 200 F for one hour. Then turn over and dry another hour. Remove surface oil by pattiung with a paper towel Cool – refrigerate or freeze in bags.
